Aji (Ecuadorian Salsa)

Serves 4-6 Prep 5 min


  • 1 or 2 jalapeños (depending on how spicy you want the aji to be)

  • ½ bunch of cilantro (no stems)

  • ½ white onion

  • 2 garlic cloves

  • ¼ cup of lime juice (~ the juice of 3 limes)

  • salt & pepper


  1. Combine all ingredients in blender and liquify.

  2. Add salt and pepper to taste (I add about 1 tablespoon of salt and ½ teaspoon of pepper.) Also, you can add a little water if its too thick.

Store in air-tight container; lasts up to 3 days in refrigerator.
